This week’s interview was so ridiculously fun with Colleen Kokx. She was beyond funny and cool and her recipes are so tasty! No, this week, I actually had time to make a recipe of hers. I’m talking about her Butternut Squash Mac and Cheese. It was sooo tasty and filling. Look, if you love mac and cheese but you need to keep the calories down, try this version. I was surprised by how much I liked this dish and even more surprised that my husband Nate gobbled it down as soon as I put it in front of him. He thought it was fantastic. You should also try her corn salad. It’s a healthy take on a more calorie-laden version that Paula Deen has but is just as delish.

And if you are a banana bread lover, you have to try her lower calorie version of banana bread. It’s about to become the new recipe staple in my house.

Finally, do yourself a favor and make Colleen’s Chia & Flax Granola. Admit it, you know you want this. Milk and I aren’t on speaking terms at the moment, but my gosh do I love a bowl of granola. I’ve now taken to putting it with fruit and yogurt, but I do miss the days of cinnamon leaching into the milk as I let the granola sit for a bit to soften. Ahhh, but I digress.
